dough (this is 3x the original recipe)
6 tablespoons olive oil
2-1/2 cup skim milk plus 2 additional tablespoons, warmed to 110 degrees
2 tablespoons sugar
7 cups all-purpose flour, plus extra for counter
2 tablespoons + 3/4 teaspoons yeast
1 teaspoon table salt

pizza sauce
shredded part-skim mozzarella cheese
pepperonis, chopped |
1. To make the dough: Adjust oven rack to lowest position and
heat oven to 200 degrees. When oven reaches 200 degrees, turn
it off. Lightly grease large bowl with cooking spray.
2. Mix milk, sugar, and oil in measuring cup. Mix flour, yeast,
and salt in standing mixer fitted with dough hook. Turn machine
to low and slowly add milk mixture. After dough comes together,
increase speed to medium-low and mix until dough is shiny and
smooth, about 5 minutes. Turn dough onto lightly floured counter,
gently shape into ball, and place in greased bowl. Cover with
plastic wrap and place in warm oven until doubled in size, about
30 minutes.
3. Transfer dough to lightly floured counter and roll into a
rectangle as you would for cinnamon rolls. Spread with sauce,
leaving the very edge of one of the long sides without sauce
so it will seal when rolled up. Sprinkle with cheeseand
pepperoni. Begin rolling up the dough starting at the long
side of the rectangle. Pinch edges to seal. Slice off equal
sized rolls using a small length of dental floss.
4. Place rolls in a greased baking dish. Cover and allow buns
to rise for 30 minutes. Bake at 350 degrees for 25-30 mins.
