Name: cafe rio pork
Ingredients:
1 18 oz bottle of coke (or dr. pepper)
1 cup of sugar
1 7oz can of chipotle chilies in adobo sauce
1 heaping tsp dry ground mustard 
1 heaping tsp cumin
1 tsp minced garlic
1 pork loin (or 4-5 lb pork roast)
Instructions:
Place pork in crockpot. 

Remove chilies from the can of adobo sauce. Rinse chilies and can with the coke to get all 
the sauce. You are using the sauce and not the chilies for this recipe. Discard chilies 
or save for another recipe.

Combine first six ingredients and pour over pork in crockpot.

Cook on low for 7-9 hours until it pulls apart easily. After cooking, shred with forks.

NOTE: I like to serve with Zataran's red beans and rice with an extra can of beans to add 
some fiber and filling to the burritos.  If you freeze burritos, make sure the pork is well 
drained or it will make your tortillas soggy.  Enjoy!
