Name: muffin mix
Ingredients:
8 cups all-purpose flour
3 cups sugar
3 tbs. baking powder
2 tsp. salt
2 tsp. cinnamon
2 tsp. nutmeg

additional ingredients:
1 egg
1 cup 2% milk
1/2 cup butter, melted
Instructions:
In a large bowl, combine the first six ingredients. Store in airtight containers
in a cool dry place or in the freezer for up to 6 months.

To prepare basic muffins: Place 2-3/4 cups muffin mix in a large bowl. Whisk the egg,
milk, and butter; stir into dry ingredients just until moistened. Fill paper-lined 
muffin cups three-fourths full. Bake at 400 degrees for 18-21 minutes or until a 
toothpick comes out clean. Cool for 5 minutes before removing to a wire rack. Serve warm.

Prep/Total Time: 30 min.
Yield: 4 batches (11 cups); 1 dozen per batch

Variations:
1 cup mashed ripe bananas (about 2 medium)

1 cup fresh or frozen blueberries

1 cup chopped fresh or frozen cranberries
1/2 cup chopped pecans
3 tbsp sugar

3/4 cup diced fresh or frozen rhubarb
1/3 cup orange marmalade

1/2 cup chopped dried apricots
1/2 cup dried cherries

1/2 cup shredded apple
1/2 cup shredded colby-monterey jack cheese

3/4 cup shredded carrots
1/3 cup golden raisins
