Name: marshmallow-topped sweet potatoes
Ingredients:
6 to 8 Baked or Boiled fresh Sweet Potatoes, peeled and sliced into 1 inch thick circles
3 Tablespoons salted Butter
1/2 cup dark brown sugar (1 Tbl cinnamon, 1/2 Tbl nutmeg)
1 bag Marshmallows (any size)
      
Instructions:
Arrange sweet potato slices in layers in a glass pie plate.
Shake brown sugar evenly over the top of the sweet potatoes.
Cut butter into small pieces and drop evenly around the top of the sweet potatoes and sugar.
Bake at 350 degrees until hot and bubbly. Approximately 15 to 20 minutes.
Remove from oven and cover the top with marshmallows, pile them up high.
Place back into the oven and watch carefully until the marshmallows begin to turn brown.
Once the marshmallows are toasty brown, remove from oven and serve.
