| nacho mac ānā cheese |
|
3 cups uncooked gemelli or spiral pasta
1/2 lb ground beef
1/2 cup chopped sweet red pepper
1/2 cup chopped onion
1/4 cup butter, cubed
1/4 cup all-purpose flour
1 envelope taco seasoning
1/4 teaspoon pepper
2-1/4 cups milk
2 cups (8 oz) shredded cheddar cheese
1 cup frozen corn, thawed
1 cup (1/2 can) diced tomatoes, drained
1 cup coarsely crushed tortilla chips

-Cook gemelli according to package directions. Meanwhile, in a Dutch oven, cook beef,
red peppers and onion over medium heat until meat is no longer pink; drain.
-Stir in the butter, flour, taco seasoning and pepper until blended. Gradually stir
in milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove
from the heat. Stir in cheese, corn and tomatoes until cheese is melted.
-Drain gemelli; add the beef mixture and stir to coat. Sprinkle with tortilla chips.
Yield: 6 servings
